Hello, I am trying to make a small little outpost tower(That could really be placed anywhere in middle earth)

To finally be able to play some siege battles.

I just need some advice to go about it.

I didn't know what to go with for a board so I grabbed some extra sheetrock laying around and then I stabled some gray cloth for the ground to it.

I was thinking of wood for the outpost... But it doesn't give you much to bend with especially if you make mistakes.

I just want a small tower, that has a little courtyard, and then stairs that lead up to the top. Any advice on what materials I should be using?

It is hard to answer a general question some times. I don't know if you have any tools. It is hard to know what advice to give. Look at some of the articles on this page. Watch some of these utub links. The guy with the hobbit hole is very entertaining. The link above is very basic . It will be a good start.
