Why were they taken out? They were a good army to use...

Well you can still take rangers as an army they just don't have the rangers of arnor as troops anymore so essentially its an all hero army

It's a lot more thematic now. The Grey Company were noted as making full grown Riders of Rohan "look like boys next to them." They were always supposed to be minor Hero-tier men. Having basic warriors to bulk out their numbers flew in the face of the whole point of the Grey Company.

Yeah I am actually really excited about what I heard about the new list. Some kind of annoying things but I like the idea they're going with a lot now.

The only issue I have with the new Ranger list is that I can't take Elladan and Elrohir without sacrificing the army bonus. Kills the theme I had going with my army.

This is indeed very unfortunate. In the same way, they should have been Historical Allies with Rohan, Minas Tirith and the Fiefdoms (Battle of the Pelennor Fields, anyone?). I would suggest to just use it as such in friendly games, and if needed persuade your opponent with the book. :)

EDIT: that said, the removal of standard Rangers of Arnor (and discouraging Arathorn & Aragorn) is in my opinion more thematic, which is nice.

Warriors of the Dead cannot ally with Rohan or Minas Tirith.

It looked to me like you can have Warriors of the Dead as full allies for Minas Tirith provided you take Aragorn in the Minas Tirith army?

Alex123 is right. Following the army book it has to be Aragorn, King Elessar for an allied Gondor army.

And rangers can be historical allies for an army of the death if they contain Aragron as Strider.

According to some recent posts on the GBHL by Jay Clare, the Rangers list doesn't necessarily represent the Grey Company - which is why Arathorn is in there too; they're just the Rangers (as per the name). He hinted you could use the Three Hunters (and presumably Elladan and Elrohir, plus historical allies) with the Rangers and the Dead in the future - quite possibly the upcoming Gondor at War book. Bit of a shame the current book doesn't cover these historical possibilities which purely use the existing miniatures, but there you are.

Jay has said there will be a future grey company list and the rangers list was a gets you by for now as the grey company has different ally options ranging from 3 hunters, twins etc that couldn't be covered in the main armies book
